Each blade undergoes (ultra6) stage heat treatment to ensure that each blade maintains its strength and function. Grind the hand to a 16-degree angle on each side.
Well-balanced 5.5" handle and 7" blade, Rockwell hardness scale is HRC 60 +/- 2. A suitable dark walnut magnetic Saya-style sheath is included to protect the blade. Handcrafted by skilled knifemakers, each precisely balanced knife combines outstanding performance with timeless design.
Kiritsuke knives are characterized by a straight blade for cutting vegetables, and a long blade can easily cut fish. The user must be proficient in using traditional Japanese knives to properly use this unique cutter design and single-edged blade. A strong magnet is embedded in the edge of Saya's scabbard to fix it on the spine of the knife. An innovative and stylish way to protect blades and fingers.
